A Step-by-Step Journey
What You'll Learn
Every step is taught hands-on. You don't just watch — you do it yourself, from start to finish.
Build Your Starter
Understand the living culture that powers sourdough. Learn what your starter needs, how to feed it, and how to know when it’s ready to bake with.
Mix with Confidence
No stand mixer needed. We’ll show you how to hand-mix, develop gluten naturally, and feel when your dough is just right.
Stretch & Ferment
Master the core technique that makes sourdough different. You’ll practice stretch-and-fold sets and understand why time and temperature matter.
Shape, Score & Bake
Give your loaf its final form, decorate it with a scoring pattern, and watch it bloom in the oven. You’ll understand the science behind the perfect crust.
Each workshop is taught by Maira herself — no assistants, no large groups.

Student Stories
What Students Are Saying
Real words from people who have sat at that table, shaped that dough, and taken their loaf home.
“I've been looking for a bakery to buy fresh bread, and stumbled on this gem. Delicious bread and Maira is a delight. The class was beyond what I expected — so warm and personal. I left with a beautiful loaf and a starter I still feed every week.”
Rachel M.
Attended Beginner Workshop
“We absolutely loved the breads. No tummy issues and you can feel the passion behind everything she makes. Taking her class felt like being in a friend's kitchen — not a formal school.”
James & Priya T.
Attended Artisan Experience
“A beautiful class experience — warm, welcoming, and inspiring. I had zero experience and left with a real loaf and a starter I've been feeding for two months. I now bake every weekend.”
